The perfect combination for an Autumn/Winter warming soup. There is nothing like fresh soup bought to the table. Pumpkin time is here and we will be busy producing our famous Pumpkin & Sweet Potato Soup, a firm favourite with our guests here at ‘Simply Healing’. All of our soups are freshly made from locally sourced growers who like us have a passion for very fresh vegetables and fruit. This hearty, warming Detox soup is one of the highlights of the evening for our guests.
Pumpkin & Sweet Potato Soup
1 small Pumpkin about 750g (1lb 10oz) in total (skinned & cubed)
2 Sweet Potatoes (peeled & cubed)
1 tbsp. Olive Oil
600ml (1 Pint) Vegetable Stock
2 Tomatoes (chopped)
4 fresh Sage Leaves
Salt & Freshly ground black Pepper
For the Garnish
18 Large Sage Leaves
Heat the oil in a saucepan & sweat the pumpkin and sweet potatoes for 5 minutes. Add the stock, chopped tomatoes & the sage leaves. Cover & simmer for about 10 minutes until the vegetables are soft.
Using a blender whiz the soup until smooth, then gently reheat and season with the salt & pepper.
For the garnish: Scatter the fresh sage leaves over the soup & serve.
